140g self-raising flour
1 Tsp baking powder
5 Tsp caster sugar
2 TBsp melted butter
1 egg (I use large)
120ml milk
Optional - a few drops of vanilla essence.
Sieve the flour & baking powder into a mixing bowl. Add the sugar.
In a mug, beat together the egg, melted butter and milk (& vanilla if using it).
Whisk egg mixture into the flour mixture, beating for a minute or two. Let mixture stand for 5 minutes.
On low-medium heat, add some butter to a large frying pan. When it bubbles, add three dollops of mixture into circles around the pan. When golden brown after a minute or so, flip the pancakes and fry for 20 seconds until browned.
Rinse pan with cold water then repeat the frying with remaining mixture.
Stack the pancakes and add your favourite toppings!
